The Mother Ring Revisited - A Giveaway

My mother has a beautiful "Mother Ring." If you don't know what that is, it's a ring with a stone that represents the birth stone of each child in the family. Click on this link to read that story.

I have always thought that I wanted one. You know, one that represents each of my kids. But I already have my mom's ring, so I have been wanting something of my own. But what?

A few weeks ago my dearest friend in the whole wide world sent me an updated version of The Mother Ring. (Because "ring" - get it?)

First, let me tell you a little about my friend (my BFF!), Pandora - her close friends call her Pam. She's funny and smart and the most caring person you would ever want to know. I've known and loved her for the past 40 years, which is pretty much a lifetime, isn't it? 

She won't mind me telling you that she has MS and that some days are better for her and some are worse. On her good days she can be found making jewelry in her little workshop.

Anyway, back to the Mother Ring. Here's what's on the other side of those little bars:

She stamped each of my kids' names and the year of their birth on each one and attached each of their birthstones. I was surprised to find five instead of just four. That's when I realized she had added my grandson, Asher. I'm seriously in love.

Amy, my first-born arrived in June of 1983 and is my Pearl of Great Price. Perfect and beautiful.

Adam was born in July of 1986. The red garnet is his stone. He's my crazy-making, passionate one.

Lucy came to us in August of 1993. Represented by the peridot, which is bright and rare.

Jon was born in December of 1995. The blue stone is Tanzanite. Unique and interesting.

Asher, our grandson was born in August of 2014. Another peridot, but in a smaller package. 

Could I be any more in love with a piece of jewelry? It's such an elegant piece and absolutely one-of-a-kind. 

It hangs on a long 20" silver chain and I've worn it pretty much every single day since I received it. I lovingly caress the bars and play with them throughout my day as I send up prayers for each one daily. It has become a talisman of the bond I have with each of them and also reminds me to bring each of their names and cares before God. 

I have ooh-ed and aah-ed over this piece so much to Pam until I have finally succeeded in talking my very generous friend into letting me offer a giveaway on my blog for one of these gorgeous custom pieces for one lucky reader, just in time for Mother's Day.

How Does My Garden Grow?

The weather here in Southern California has been phenomenal lately. Seriously. It has been the most perfect Spring so far. Very mild. Low 70's with a delicious breeze and then cooling in the evenings. (Go ahead. Take a moment. I'll wait until you're over your jealousy.)

As the days grow longer and the weather gets so super inviting, and in spite of our busy schedules, we always set aside a few hours on the weekends just to be outside in our own space. You know how much I love my garden. Well, this kind of a Spring practically screams, "Come out and play right now!" 

Also, I'm thinking I'm going to have a Big Birthday Celebration next month (Eric and I both have "milestone" birthdays this year) and because our house is freakishly small charmingly small and cottage-like, the party will have to be outside. Just like we did last year with Jonathan's graduation party.

We started cruising around both our front and back yards, making notes about what needed to be done and as we looked at our potted plants and beds we truthfully started to feel a little embarrassed. Don't even get me started on the condition of our lawn.

Time to bring out The Secret Weapon.

We recently spent a sunny afternoon - a perfectly perfect Southern California afternoon, not too hot, not too cool, but that's not important right now - weeding and pruning and refreshing all of our pots and garden beds.

The pots got a big dose of potting soil. We repotted some and just added soil to some others. The plants are super happy. Soil is a big thing for them, you know.

I want to make a distinction between the two Scotts products we use:

The beds have eroded some from last year and I know they get so much happier when we give them this delicious soil because it also feeds for up to 6 months. 

Plus, my roses are already starting their first bloom and I'm a little crazed thinking about how awesome they're going to be after they get some fresh soil.

Once we get our garden and backyard freshened up and it's all happy again, all I will have to worry about is the food for our party. I think all the prepping and planning may just be my very favorite part of entertaining.

And...they're off!

This is not the way I pictured it. 

I'm talking about my life as Eric and I approach our Twilight Years. Which are really more of a pale yellow at this point, but that's not important right now.

Here's how I pictured it:

My kids would all be grown and gone. I have never had any illusions that they'd stay home forever. That would be just plain weird. 

But I did picture them living nearby. And they'd be coming over for a weekly family dinner. And we'd sit around the table and I would bask in the love and fabulousness of the beautiful family I'd created. And we would grow. And the table would stretch to accomodate more. It would all be super noisy and delicious and there would be lots of laughter and smiles.

And that would be how Eric and I would live out our Twilight Years. Happily surrounded by our growing family and maybe investing in a bigger table.

But obviously God (and my growing family) have other plans for this whole Twilight Years business.

As you know, Amy Kikita moved to Florida last year. See this post about Changes. I wrote about all that last August and now, just recently, there have been so many more changes. Which is where I find myself today - thinking about all of this and questioning my Twilight Year Plan.

From that writing to now, Amy has landed a job in Sacramento, California. 400 miles away, but now she's at least on our coast and is only a one hour flight away. She's busy shopping for an apartment and furniture and settling in to her new (from the sound of it) Hipster lifestyle.

Adam has taken a job in Washington D.C. with the Susan B. Anthony List. I'm quite excited for him as this is a great opportunity, but of course, that means he is clear across the country. Alysha and the baby are still here as he looks for a place to live, but they'll be leaving in about a month. I will miss them terribly. Especially my grandson, Asher.

However, we are happily offering our babysitting services as often as Alysha will let us.

Lucy moved out last September (see this post about Finding Her Place) and is adapting well to her new digs. She's also only a few minutes away right here in Mission Viejo, but she's busy starting her own graphic design business, so I have to bait her with use of my washer/dryer and food. It's working so far. (Food always works.) Who knows what her next adventure will bring?

Jonathan is in school and going from audition to audition, which means driving to Hollywood a few days a week. Some days I'm lucky enough to be called upon to be his carpool buddy. But I'm picturing the day he needs to move up there permanently. For now, he's still here with us.

But who knows for how much longer?

Here's how I'm dealing with all of it...

The weekend that Adam was set to leave, I bought Amy a plane ticket to come down and scheduled a family photo shoot and going away dinner. 

I contracted our friend and Master Photographer, Dan Shalaby to document the magic and we spent a few hours down at our favorite beach frolicking and posing. Or photobombing. Or just having fun together.

I just wanted one last hurrah before everyone went their separate ways.

Many Cuban mothers take issue with their kids moving away. I swear, I thought I'd totally be in that category. Until now.

Now, I'm just embracing the moments as they come. So grateful that we live in the age of Skype and FaceTime and texts and emails and Facebook and Instagram. (Also, I'm Smrtqbn on Instagram if you want to follow me.)

I love that they have developed their own relationships with each other. I'm no longer the glue that holds them together. Even though I am the one who insists on the photo shoots, but that's not important right now.

I'm grateful that they're all so much fun to be with and I'm looking forward to reinventing myself.

I still can't get enough of my grandson, Asher. But that's the general consensus around here. That kid is seriously well-loved.

So I'm working on accruing miles on my Southwest credit card and making plans to travel more often this year and thinking big thoughts about what I'd like the next chapter of my life to look like.

And truly, Eric and I are happy in this season. It's taking some getting used to not having all the crazy around all the time. But it's really good. We are delighted for all of their success. And grateful for the quiet days.

As far as my Dinner Table Fantasy goes, I had them all with me right after the photo shoot. We went to our favorite Cuban restaurant (of course) and it was all super noisy and delicious and there was lots of laughter and smiles.

Cuban Pizza Recipe

 When I say I'm making Cuban pizza, no one believes it's a real thing. 

What makes it Cuban, you ask? Well, it starts, just like all good Cuban food, with a sofrito. A Cuban "sofrito" is the beginning and end of all that is good and holy about Cuban food - onion, garlic, bell pepper perfectly sauteéd in olive oil with a hint of tomato and spices. 

For the cheeses, you will want to add some gouda to the mozarella and parmesan. Then just sit back and enjoy the compliments. 

The Very Best Homemade Cuban Pizza EVER

  • 2 pkgs. Pre-made pizza crust or you can also use the refrigerated dough (I use Boboli Original Pizza Crust)
  • Olive oil
  • 6 garlic cloves – minced
  • 1 small yellow onion – diced
  • 1/2 green bell pepper – diced
  • 1 small can tomato paste
  • 1 small can tomato sauce
  • 3 Tbsp. Dry white wine
  • 1 tsp. whole cumin
  • 1 tsp. Oregano
  • Salt & pepper to taste
  • 3/4 cup grated Gouda cheese
  • 3/4 cup grated Mozzarella cheese
  • 1/2 cup fresh grated Parmesan cheese

1) In a large skillet, sauté garlic, onion, and bell pepper in olive oil over medium heat.

Remember, you’re making a sofrito for the sauce.

2) Cook and stir until onion is translucent, but make sure not to burn the garlic.

3) Add tomato sauce, tomato paste, white wine, cumin, oregano, salt, and pepper.

4) Cook over medium heat for about 5 minutes or until well-blended and heated through.

5) Spread this sofrito sauce over pizza dough.

6) Mix the gouda and mozzarella cheeses together and cover the pizzas with these.

7) Sprinkle the grated Parmesan over all. This is what gives it that toasty cheese look and taste.

8) Sprinkle lightly with a little bit more oregano.

9) Cook in a hot oven at 450 degrees for about 15 minutes or until cheese is melted and toasted.

10) WARNING: Resist the temptation to bite into it immediately, even though you will be enticed to do so by the blissfully amazing Cuban-food smell. 

11) You can thank me later.

As you well know, it's my great pleasure to be a part of the Cuban Heritage Day at Dodger Stadium Committee

For one, we get to have our meetings at Porto's, but that's not important right now. What's so very cool this year is that the Dodgers love our Cubanity (<--that's a word, rightr?) so much that they've added a Cuba Night At Dodger Stadium

Is it summer yet?

The Son of a Bartender and a Maid

A few months ago I was invited to an intimate lunch reception at Gaviña and Sons Coffee Roasters. As you well know, I never turn down an opportunity to visit them as it's always a wonderful time, so I went. 

The guest of honor was none other than Senator Marco Rubio. He was in town trying to make a Big Decision and was wanting to connect with the Cuban community here. 

Again, it was a relatively small group (as these things go) and we waited patiently for his arrival, made easier by the generous donation of Cuban pastries by Gigi's Bakery, but that's not important right now.

The Senator came in and asked not to be videotaped as he was just talking with us "entre familia." (As family.)

And he spoke to us from his heart. 

He answered every single question thoughtfully and not at all like you would imagine a politician would. He was genuinely wrestling with big questions, big policies, big problems and said so. He didn't know for sure at the time, but was considering a presidential run. 

His family was the biggest factor in this decision. 

He spoke in both English and Spanish as many of us Cuban Americans do in our own homes and with our people. I just loved that.

Picture a group of loud, enthusiastic, opinionated Cubans asking tough questions and pushing for serious answers. I was more impressed than ever that the Senator held his own with us.

And when he was finished, he stopped and smiled and took a moment and a photo with every single person in attendance. I was super impressed by this. Of course, we all loved every minute of it.

The lunch was catered by a local Cuban restaurant (of course) and it was right at the moment I sat down to eat and catch my breath and Senator Rubio was behind me getting his food that I thought, "A Cuban-American may actually be President of the United States one day."

And then the tears began. 

He sat down at our table and I was too overcome to even speak. Here was a wonderful embodiment of the fruit of the sacrifices of our Cuban parents. They came here to America to find a better life and hopefully give their children more opportunities. 

Also, how crazy is it that at the very moment that HE SAT DOWN AT OUR TABLE that I was overwhelmed and weepy and unable to speak. *sigh*

All of this hit home yesterday as Senator Rubio made his announcement that he would indeed seek the GOP nomination for President of the United States. 

Here's a two minute recap from Bloomberg. 

Let me be perfectly clear: I have no crystal ball or way to predict what will happen over the next 18 months, but I'm super happy and proud that so far there are 3 GOP contenders for the Republican nomination and two are of Cuban descent. 

Of course, that's not a reason to vote for anyone. My point in taking the time to write about this today is that it's a big deal for those of us whose families came here fleeing tyranny and hoping for a better tomorrow. Here's one of our own chasing the biggest office in the land. Go, Marco, go!

I'm also super delighted that I got to be present as history was being made when the Senator spoke to us from his heart about his vision and his profound belief that America is indeed an exceptional country. It's been way too long since we've heard that articulated from the seats of power in this land.

It's a proud and wonderful moment and I'm going to swim around in it until my fingers get all pruney. 

As the daughter of a Cuban engineer and a housewife who came here looking for a new life, I too have dreams for a wonderful future for my own family.

And are you now so super excited for Cuban Heritage Day at Dodger Stadium coming this summer? (Of course you are.) We've also added a Cuban Night at Dodger Stadium this year. On Monday, May 11th at 7:10pm. How cool is that?

I happen to live a few area codes from Chavez Ravine, but having grown up in Santa Monica, LA will always be my team. And, of course, I'm Cuban, which means baseball is part of my cultural DNA.

I'm super excited to be involved in the Cuban Heritage Day Committee to help plan all the fun for Cuban Heritage Day (July 12, 2015) and Cuban Night at Dodger Stadium (May 11th, 2015).

Recipe Development - let’s discuss this for a moment. 

When I hear the term, “Recipe Development,” I think of scientist types in an expansive, pristine kitchen, clothed in white lab coats and safety goggles. Because “Recipe Development," you see, is probably something that's best left to the professionals. 

At least that’s the way this plays out in my mind. However…

I’ve had an idea for an appetizer-type recipe rattling around in my brain for a while. It has some of my favorite ingredients with the delicious addition of bacon. It would be ideal for a game day snack. 

And serendipitously, I’ve been tasked to develop a recipe using Farmland® Bacon. 

Full confession: My first reaction was, “Seriously? I’d so love to.” My second reaction, “I don’t really know if Recipe Development is part of my particular skill set.” Of course, I didn’t say this out loud, but that's not important right now. 

It had to be something that appealed to my Cuban sensibilities. And incorporated bacon

“Seriously? I’d love to!”

The best ingredients are key for this recipe to taste like I wanted it to. Farmland® Bacon has that whole “slow smoked over real wood” thing going for it so that was a no-brainer. (I buy it at Walmart.)

The Farmland® Bacon is what takes this recipe to that next level. So much so, that I thought about calling this recipe, “Every Delicious Bite.” Yep. It’s that good.

Ladies and Gentlemen, without further ado, let me present to you my latest recipe (drum roll, please).

Bacon Guava Cream Cheese Bites.

Let’s just observe a moment of silence, please. Thankyouverymuch.

I have had cream cheese wontons before and I think they’re perfectly lovely. Of course, when my thoughts turn to cream cheese, you know I will be thinking of adding guava somehow very soon. But then, I still needed to incorporate bacon into this mix. 

That’s right when the whole thing went from Pedestrian to Sublime, the Heavens opened and an Angelic Choir burst into a Song of Great Celebration and Joy. That, or I got really, really excited.

Bacon. Guava. Cream Cheese. Wontons. Together at last.

Believe me when I tell you that this is a pretty brilliant combination of textures and flavors. And you’ll be floored by how these beautiful little creatures can be put together so quickly and so very deliciously.

The guava is what gives it the sweetness. Paired with the cream cheese it takes this to the Next Level of Cubanity. The bacon? Well, the bacon is what makes it other-worldly. And when you deep-fry these little bundles you get crunch. Everything you want in a Cuban-style appetizer or game day treat. 

Bacon Guava Cream Cheese Bites

INGREDIENTS

  • 1/2 lb. (half a package) Farmland® Classic Cut Bacon
  • Square wonton wrappers (I used the small ones.)
  • 4 oz. cream cheese
  • 4 oz. guava paste
  • Cooking oil (for deep frying)
  • Water (to glue the wontons)

1) Slice the entire package of bacon down the middle so you have shorter pieces to cook. 

2) Fry these in a hot skillet until they are crispy, but not burned. 

3) Drain on paper towels and chop roughly into smaller pieces.

4) Separate the thin sheets of wonton. I used both 1 and 2 sheets. Two sheets add more crunch. This will depend on your personal preference. I tried some both ways and I was equally happy.

5) Cut up the guava into small pieces.

6) To build the wontons, place small pieces of guava in the center of the wonton.

7) Spread with cream cheese, drop a few pieces of the roughly chopped bacon into this little cream cheese nest.

8) Dip your fingertip in water and run a tiny bit of water around the edges of the wonton. This acts like glue. You can also use egg white for this. Grab the corners of the wonton and squish (<—yes, that’s the technical term for it) corners together to create a little pouch.

9) Heat your oil in a deep skillet. The depth of the oil should just cover the wontons.

10) Fry quickly in the very hot oil. It should only take about 10-15 seconds, if that. Work in small batches. Don't do more than 3 or 4 at a time. They cook very quickly.

11) Drain cooked wontons on a paper towel.

12) Let them cool slightly before eating. They’re great at room temperature.

13) Serve and receive your praises. 

Makes about 36 pieces.

What's Important Right Now - March

I really am so very grateful that I have so many wonderful opportunities come my way. I seriously get to go to some fun places and do really fun things. Like that time I went to Pixar and Skywalker Ranch. (I told you. Insufferable.)

But my real life moves at a much slower and more reasonable pace. I still make dinner every night (mostly) and have mountains of laundry to do each week, but that's not important right now.

What is important right now is the following. 

Discovering lots of places in and around our own area code. It's amazing sometimes the things I take for granted.  This is at The LAB - AntiMall. 2930 Bristol St., Costa Mesa. Hands down the coolest hipster place to do a photo shoot in our area. (It took Lucy no time at all to move those cubes around while I just clicked the shutter.)

Watching our grandson, Asher grow and change from month to month. He is the happiest, smiliest little human ever.

Appreciating that Eric can juggle. Seriously. He will come home from work and we then sit outside and discuss our day while he expertly throws those pins around. I love that.

Shopping at the local Farmers Market every week. We like eating fresh anyway, but it's super fun to grab some local produce and plan new menus each week. (Of course I made flan. Why do you ask?)
